Owner and head baker Kim Wiseman spent 25-plus years as an ICU nurse before turning a lifelong passion into her dream: a true French-style bakery. Everything is made from scratch, from the hand-shaped artisan sourdoughs in multiple flavors to croissants that reviewers describe as creamy inside with a flaky, layered crunch. On one busy morning the bakery pumped out 200 cinnamon rolls, 144 bagels, and 100 bread boules and still closed with empty shelves.
